Last nigh I was going through my fridge and needed to clean out the veggies I had from last week.... So I found a recipe online for a Mexican Vegetable Soup. Believe it or not, I've NEVER made soup!!
I didn't have all of the ingredients and I had a few veggies that were not part of the ingredients... So here is what I came up with...
Mexican Vegetable Soup
1 cup of frozen peas
2 cups of frozen corn
3 cloves of garlic, minced
2 small uncooked zucchini, cubed
14 oz canned diced tomatoes with jalapeños
1 can of diced green chillies
1 medium onion, chopped
1 medium green pepper, chopped
1 medium jalapeño pepper, finely chopped (I used about 2 tbsp of pickled jalapeños)
2 tsp oregano
2 tsp ground cumin
6 cup(s) vegetable broth
8 oz cremini mushrooms
2 tsp cilantro
2 Tbsp fresh lime juice
Place all of the ingredients in a large pot, cover and bring to a boil over high heat. Reduce heat to low and simmer partly covered for 10 minutes.
And there you have it! It is pretty filling and has a nice kick to it! :) You'll get about 12 one cup servings.
